Healthy Banana Bread 

INGREDIENTS: 

2 cups of wholemeal self-raising flour 1 tsp cinnamon 1 & 1/2 tsp cornflour 1/2 tsp vanilla bean 1/3 cup milk 1/3 cup maple syrup 1/3 cup coconut oil (melted) 1 & 1/2 cups chickpeas (drained) 3 medium bananas (mashed) 

 

METHOD: 1. Pre-heat oven to 175 degrees. 2. Put bananas, chickpeas, melted coconut oil, maple syrup, vanilla bean and milk together and blitz (you can use a bar mixer, blender, etc) 3. Put wholemeal self-raising flour, cornflour and cinnamon into a bowl and make a well in the middle. 4. Pour the wet ingredients into the well of the dry ingredients and whisk. Your mixture should be thick, but fluffy. 5. Pour batter into tin and bake for 45-50 minutes. Cool for at least 10-minutes before putting on a cooling rack. 

 

This is also yummy with chopped bits of strawberry, blueberry or banana added to the batter, or chocolate chips. It also freezes well in slices for lunches and morning teas.
