Carrot Cake
Ingredients
1 1/3 Cups Self-Raising Flour
1 teaspoon Bicarbonate of Soda
1 teaspoon cinnamon
1/2 teaspoon Nutmeg
2 cups of grated carrot
1 cup chopped walnuts
2/3 cup sugar
1 teaspoon vanilla
3 eggs, lightly beaten
Lemon Frosting
50g Cream Cheese
2 tablespoons butter, softened
2 teaspoons lemon juice
1 teaspoon finely grated lemon rind
2 cups icing sugar mixture
Method
- Sift flour, bicarbonate of soda and spices into a bowl.
- Add carrots, walnuts, oil, sugar, vanilla and eggs and mix lightly.
- Place in a greased and papered 28x20cm lamington tin and bake in a moderate oven (180C) for 35 to 45 minutes or until cooked when tested with a skewer.
- Stand for a few minutes before turning out carefully to cool.
- Combine all ingredients and beat well until smooth and creamy.
- Ice with lemon frosting and serve cut into squares and if desired, top with fresh passionfruit.
