Our Seniors will be sharing a recipe with you, that they use in their cafe, so that you can recreate it at home!

Carrot Cake

Ingredients

1 1/3 Cups Self-Raising Flour

1 teaspoon Bicarbonate of Soda

1 teaspoon cinnamon

1/2 teaspoon Nutmeg

2 cups of grated carrot

1 cup chopped walnuts

2/3 cup sugar

1 teaspoon vanilla

3 eggs, lightly beaten

Lemon Frosting

50g Cream Cheese

2 tablespoons butter, softened

2 teaspoons lemon juice

1 teaspoon finely grated lemon rind

2 cups icing sugar mixture

 

Method

 

  1. Sift flour, bicarbonate of soda and spices into a bowl.
  2. Add carrots, walnuts, oil, sugar, vanilla and eggs and mix lightly.
  3. Place in a greased and papered 28x20cm lamington tin and bake in a moderate oven (180C) for 35 to 45 minutes or until cooked when tested with a skewer. 
  4. Stand for a few minutes before turning out carefully to cool.
  5. Combine all ingredients and beat well until smooth and creamy.
  6. Ice with lemon frosting and serve cut into squares and if desired, top with fresh passionfruit.
