The Community Garden was well looked after by Mr. Hunter and Greg over the holidays. The hot weather didn’t stop the seedings from growing into healthy young plants. We are planning to grow sponge gourd next to the choko (chayote). Please come and join us on Wednesday afternoons during the school term.

 

 

Recipe - Thai Salad LARB 

 

Thanks to Tee, mother of Kwanchira (Kinder) and Keeratiphum (Foundation) for showing the Parent Group how to make Larb. We brought home some salad for the family to taste. It was delicious!

 

Ingredients: Pork mince (1kg), 200gr of cooked pork belly skin (cooked to get the top part), 2 big red onions (thinly sliced), 5 spring onions (finely chopped), 3 red chillis, 1/2 cup of ground rice grains (fry the rice grains in pan without oil until the grains turn dark brown), 2 or 3 cups of chopped coriander, chopped mint (1 cup), lemon juice (1 cup)

Seasoning: Chicken powder, sugar, salt, pepper

 

Method: 

  1. Stir fry pork mince with 2 tablespoons of cooking oil, season with chicken powder, sugar, salt and pepper. Leave it to cool down. Then add in cooked pork belly skin
  2. Transfer the mixture to a big salad bowl, mix it well with all prepared vegetables, rice grains and lemon juice. 
  3. Add more seasoning to your taste (lemon juice, sugar, salt etc..)
  4. Serve with steamed sticky rice or with other food of your choice (prawn crackers, wraps, bread etc.)
