Hello Kids and Families!

 

As the days are getting colder and shorter, I hope you're still finding ways to get outside and enjoy some amazing winter adventures! I'm really looking forward to seeing Mount Wellington covered in snow again. Hopefully we can have a fun snowball battle with freezing hands and bring out the sled! 

 

I'd like to encourage parents to come visit the canteen if you have any questions or concerns about food we serve. We’re always happy to talk, and we’re open to suggestions and new recipes too. Just sign in at the office and they will show you where to go.

 

Also, I'd like to remind all families about the great work Mr. Brighella has done with our school garden beds. With the help of all the kids, we’ve been growing spray-free vegetables that we can enjoy to put on our plates and build a healthy future. 

 

A couple of weeks ago, we made meatballs and it was a big hit! Today, I’d like to share that recipe with you:

Meatballs Recipe

Ingredients for 4 people:

  • 2 slices of bread, cut into chunks
  • 1/2 cup of milk
  • 350g of premium beef mince (or pork or lamb if you prefer)
  • 2 eggs
  • 1 handful of chopped parsley
  • 1/4 tsp grated nutmeg
  • 1/3 cup grated parmesan cheese
  • 2 tsp salt
  • 1 tsp ground white pepper
  • 1 garlic clove
  • 3 tbsp extra virgin olive oil
  • 2 tins of tomatoes
  • Breadcrumbs (to dry mixture if too soft)
  • Salt to taste

How to:

  1. Soak the bread in milk for about 10 minutes.
  2. In a bowl, mix the beef mince with egg, salt, pepper, chopped parsley, nutmeg, and parmesan cheese.  Add salt and pepper.
  3. Squeeze out the milk from the bread and add it to the meat mix. Mix well and add breadcrumbs if the mixture is too soft.
  4. Roll into small balls about the size of mandarins. Place them in the fridge for 15 minutes to firm up.
  5. Roll the meatballs in flour and fry gently until crisp on the outside. Place on paper towels to remove extra oil.
  6. In a pan, stir-fry garlic and onion (you can also add rosemary or oregano), then add the tomato sauce. Cook for 10–15 minutes.
  7. Add the meatballs to the sauce and simmer for 20–30 minutes on low heat. Season to taste and serve with mashed potatoes, spaghetti, or anything you like!
