Pumpkin Mac & Cheese
Ingredients
- 500 grams of pumpkin
- 500 grams of macaroni
- 80 grams of butter
- 3 tablespoons of plain flour 500ml of milk
- 1 teaspoon of English mustard 1/4 teaspoon of paprika
- 75 grams of feta
- 125 grams of tasty cheese
- 8 sage leaves
- extra 1 cup of tasty cheese
- Salt and pepper
Method
- Oven 180C
- Peel and chop the pumpkin into 3cm chunks. Bring a large saucepan of water to boil, add the pumpkin and cook for approx 10 minutes or until soft. Scoop them out with a slotted spoon, into a bowl. Lightly mash with a fork. DON’T DRAIN THE WATER, WE WILL COOK THE PASTA IN IT.
- In a medium saucepan, melt the butter. Add the flour and using a metal whisk, stir. Remove from the heat, slowly add the milk while continuing to stir. Put it back on the heat and using a wooden spoon, continue to stir until it gently bubbles and thickens. Add the mustard and paprika and season with salt and pepper.
- Cook the macaroni in the pumpkin water according to the instructions on the packet. Drain, retaining about 1 cup of the water.
- Add the macaroni to the pumpkin mixture, mix. Crumble the feta into this mixture. Then fold in the white sauce. Add the grated cheese. If it is very thick add some of the water that the pasta had been cooked in.
- Spoon into a large lasagne dish, sprinkle over the extra cup of tasty cheese, with the chopped sage through it.
- Bake for approx 20 min
Our Chooks
One of the students favourite things about being in the kitchen garden is
interacting with the chickens.
We have five beautiful girls living in the kitchen garden providing much joy and an egg a day.
We have some very loyal volunteers who have been on the chook roster for some time but we need more.
We have a roster so that the chooks are looked after on weekends and days when the kitchen garden isn’t operating.
Duties involve letting the chickens out into their run of a morning (at drop off if during the week), checking their food and water, collecting the eggs and then locking them up again in the afternoon (pickup).
If you are interested in helping, please pop down to the kitchen garden at drop off any Wednesday or Thursday morning and ask for Andrea or ask reception to put you in contact with Andrea.
The Stephanie Alexander Kitchen Garden volunteer roster for TERM 3 is now available!
When you arrive to volunteer, always enter the school via the main Tooronga Road gate and sign-in at reception before walking down to the SAKG.
To sign up, please click on the link below that matches the year level & class that you wish to sign up for. From there, select the class by clicking the tab at the top of the page. You will then need to enter your name and phone number.
Please note that all volunteers, including grandparents, must have a current WWC to volunteer in any capacity at ASPS.
Sincere thanks for your support!
