Easy Rice Pudding (with Leftover Rice)

 

Got some leftover rice and want to make some super creamy rice pudding for dessert or breakfast? Try this quick, tasty, kid-approved easy rice pudding recipe with cooked rice, milk and vanilla!

PREP TIME 5 minutes

COOK TIME 5 minutes

TOTAL TIME 7 minutes

 

Ingredients

  • 1 cup cooked rice
  • 1 ½ cup milk
  • 1 tbs sugar
  • 1 tsp vanilla

Additionally

  • cinnamon
  • fresh or stewed fruit

Instructions

  1. Add the rice, milk and vanilla to a saucepan and stir at low heat for 5-6 minutes until almost all the milk is absorbed and the mixture is creamy.
  2. Cover with a lid and let sit for about 5 minutes.
  3. Top with cinnamon and fruit of choice and enjoy

For hot season: Optionally you can let the rice cool off and put it in the fridge for a ready-to-go breakfast. Top with fruit and nuts if desired.

What have you learnt about rice in Kitchen Garden the last four weeks ?

'The fried rice tasted kind of sweet and kind of savoury. It was flavoursome, and the vegies really shined.

I enjoyed learning about the process of growing rice on farms in Australia. First the rice is planted by a small aeroplane. When it grows it is collected by a tractor and gets taken to a shed to go through another machine.'

'I enjoyed making fried rice. It was so delicious. I loved chopping the peppers.'

'I loved learning how to cut the apples when we were making rice pudding. '
