How to make Sushi
with Brendan and Jon
Ingredients
2 cups (rice cooker measuring cups) sushi rice
3 cups (rice cooker measuring cups) water
2.5 tbsp rice vinegar
1 tbsp sugar (I no longer add the sugar and the kids don’t notice!)
A pinch or two salt
Fillings:
1 cucumber
1 carrots
95 g tuna mixed with mayonnaise
6 sheets toasted seaweed (nori)
Wasabi paste (optional)
Soy Sauce (optional)
Tools:
Bamboo mat
Knife
Cutting board
Mixing bowl
Flat bottomed container
Spoon
Wash Sushi rice with water until water runs clear.
Add the rice to the rice cooker and pour water on top and cook with lid on.
While the rice is cooking, prepare the fillings for sushi. Fillings include wide varieties apart from listed on recipe. You may add:
Avocado slices
Capsicum slices
Cooked chicken breast with teriyaki seasoning / deep fried strips
Smoked salmon slices
Tuna slices
Crabsticks
Fish roes
In a small bowl add the vinegar, sugar, and salt. Whisk with a fork until well combined and sugar dissolves.
Once rice has cooked and been sitting for 10 minutes, scoop it out into a flat-bottomed container. Spread the rice out and break up any clumps.
Pour the vinegar mixture slowly through the rice while still breaking the rice up.
Cut the nori sheet in half. Place it shiny part upside down and put some rice on it. Press down with fingers to a depth of 0.5 cm.
Arrange the fillings on top of the rice in a line. Roll the nori strips and cook into six or eight pieces using a sharp knife.
Cover and refrigerate for 60 minutes, so that the sushi softens.
