Portuguese Chicken Casserole (serves 4)

Ingredients

  • 4 boneless chicken thighs (or breast) – cut into 2.5cm (or 1 in.)  pieces, seasons with 1 teaspoon of salt and pepper for 30 minutes. 
  • 4 small red potatoes (480g) – quartered
  • 1 teaspoon olive or grapeseed oil
  • 1 onion – chopped 
  • 3 gloves garlic - chopped
  • 125g Chorizo – thinly sliced
  • 20g black olive slice
  • 2 carrots – small diced
  • 3 hardboiled eggs - sliced
  • 250g coconut milk
  • 250g chicken stock
  • 30g unsalted butter
  • 3 tablespoons all purposes flour
  • 1-1/2 tablespoon curry powder (mild or spicy to taste)

Method

  1. Steam potatoes for 20 minutes, strain and transfer to the casserole
  2. Preheat oven to 180oC
  3. Heat olive oil in a separate pan, brown chicken, garlic, onion and Chorizo in pan over medium heat for 3-4 minutes, add in black olive slices and carrot, stir and cook for another 1 minute and then transfer to the casserole over the steamed potatoes.
  4. Evenly put boiled egg slices over the top of chicken mix
  5. In a small saucepan, melt butter over medium heat. Whisk in the flour until smooth. Gradually whisk in the curry powder, coconut milk and chicken stock. Bring to a boil, add salt and pepper to taste; cook and stir for 1 minute or until slightly thickened. (Depending on which coconut milk is used, you may need to add more chicken stock if the sauce is too thick)
  6. Pour the sauce onto the casserole over the ingredients
  7. Cover and transfer to oven. Bake for 30 minutes and then remove cover to bake for another 10 minutes or until slightly brown.

Serve with steamed rice.
