Kitchen Garden Program Update

This month in the Kitchen
As it moves into the cooler months, we decided to use the Jerusalem Artichokes and pumpkins we harvested form the garden to make some warming and delicious soups.
The Jerusalem artichoke, also called sunchoke, is a species of sunflower native to central North America. It is cultivated for its tuber, which is used as a root vegetable and can be eaten raw, cooked or pickled. Jerusalem artichokes are high in fibre, iron, Vitamin B1 and potassium. They have a lower (GI) score than potatoes.
We also made the best focaccia recipe from the Stephanie Alexander Kitchen Garden recipe resources. I have personally tried four different focaccia recipes (with varying results) and this one has been the quickest and most successful for me.
Students created some focaccia art on the top of the bread and the finished product was devoured dunked into our creamy soups.

We took some inspiration from World Bee Day to learn about the difference between native bees and European honeybees. We read some books about bees, completed research on the Aussie bee website and even tasted some honey from the Beechworth honey factory and from some local hives. Thanks to Hudson and Gilbert for sharing some honey from their very own hives.
In the garden we planted a range of seedlings including bluebells, kale, lettuce, broccoli and cauliflower. The students made paper pots for our beetroot and kohlrabi seeds which are growing nicely in the hothouse. We have harvested plenty of parsley and fennel seeds and groups of students have packed and labelled these alongside lemon myrtle tea bags and dried bay leaves. Others worked with parent volunteers to make jams and preserves with produce from the garden. These will go on sale early next term in our market stall. Keep an eye out in the newsletter for details.
