Grandma’s No Fail Sponge Cake

My Grandma taught me how to bake this cake when I was still in primary school, it was a staple at birthday parties for my brothers and I.

 

INGREDIENTS:

4 eggs

1 cup caster sugar

½ cup corn flour

½ cup custard powder

1 teaspoon cream of tartar

½ teaspoon bicarb soda

 

PROCEDURE:

  1. Beat the room temperature eggs and sugar until thick. When you lift the beaters, ribbons should form in the cake mix
  2. Sift the dry ingredients together twice
  3. Gently fold the dry ingredients into the egg and sugar mix
  4. Bake in a 180° oven for 20 minutes, or until an inserted skewer comes out clean
  5. Once cool, cover with your favourite icing (I like passion fruit, my brothers always wanted strawberry)

Dad’s Famous Hamburgers

My Dad makes these hamburgers every time we have a BBQ or family gathering. There is absolutely no reason why they should taste so good, there isn’t a secret ingredient or trick, they just taste great!

 

INGREDIENTS:

500g minced beef

1 egg

grated onion and carrot

breadcrumbs

iceberg lettuce, cheese, bacon, to serve

 

PROCEDURE:

  1. Mix the beef, egg and grated vegetables together
  2. Add breadcrumbs to remove wetness, if required
  3. Cook on a BBQ or frying pan until cooked all the way through
  4. Serve on a soft white bun with iceberg lettuce, cheese and cooked bacon. You can add other toppings like beetroot, pineapple or barbecue sauce, but don’t tell my Dad I said that, he doesn’t like adding ‘fancy’ things to his burgers.
