Damper Two Ways, savoury and a sweet versions

It’s been a busy few weeks in the NMPS kitchen, with Year 4 learning new skills and creating some delicious meals.
Week 2 we prepared Damper Two Ways, a savoury and a sweet version. Our savoury damper combined garden greens including silverbeet, parsley, saltbush, and warrigal greens, with some cheese and herbs. While our sweet version combined vanilla and lemon myrtle and was served with a whipped maple syrup butter and raspberry coulis.
Week 3 we started knife licenses, practicing our safe knife skills to prepare a buckwheat and coconut granola with fresh chopped fruit. We concentrated on two techniques “The Bear Claw” and “The Bridge” to prepare our fruit and layer it in a glass with freshly baked granola and yoghurt.
Everyone’s teamwork, communication, and concentration in the kitchen have been wonderful. Keep it up Year 4!
