Year 9 Chinese-Peruvian Fusion Cooking: Lomo Saltado 

Last Friday the Year 9 Chinese through Travel and Year 9 Spanish through Art & Culture classes combined to cook the national dish of Peru, Lomo Saltado. Lomo Saltado is a Chinese inspired beef stir fry with Peruvian fried potato and tomato. 

 

Chinese people have been migrating to Peru since the 1820s and have had a huge impact on Peruvian cuisine, introducing ingredients such as soy sauce, Chinese cooking wine, ginger and dark vinegar. This led to the fusion Chinese-Peruvian cuisine called Chifa food, which is believed to come from the Cantonese word 饎飯 meaning  “to eat rice”. Chifa cuisine often has the appearance of Cantonese Chinese food, but contains many Peruvian ingredients, such as potato, tomato, corn, potatoes and even alpaca, llama and guinea pig! 

 

Following a recipe independently, the Year 9 students cooked with both Andean and Sino flair. This will hopefully be the beginning of many joint cultural activities between Chinese and Spanish.
