Berry Good Pancakes

Blueberry and Cinnamon Pancakes

Ingredients:

  • 1 and ½ cups of milk
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2cups self-raising flour
  • ¼ teaspoon bicarb soda
  • 1/3 cup caster sugar
  • 25g melted butter
  • 2 teaspoons grounded cinnamon
  • 1 cup blueberries
  • 2 tablespoons brown sugar

Method 

Step 1

Whisk milk, egg and vanilla together in a jug. Sift flour an bicarb soda into a bowl, stir in sugar. Then make a well in the  centre of the bowl, add milk mixture whisk until just combined stir in cinnamon blueberries and sugar.

 

Step 2

Heat a large non-stick frying pan over medium heat, brush pan with butter using one 1/4 Cup mixture per pancake, cook 1-2  pancakes (depends how big your frying pan is) for 3 to 4 minutes or until bubbles appear on top.

 

Step 3

Place on a plate and put whatever toppings on your pancakes I recommend you sift icing sugar and Maple syrup.
