ANZAC Biscuits

INGREDIENTS

  • 1 cup plain flour
  • 1 cup desiccated coconut
  • 1 cup rolled oats
  • 1/2 cup caster sugar
  • 1/4 cup brown sugar
  • 125g butter
  • 2 tablespoon golden syrup
  • 1/2 teaspoon bicarb soda

METHOD

  • Step 1

Preheat oven to 180C. Line 2 baking trays with baking paper. Put the flour, coconut, rolled oats and sugar in a large bowl and stir with a wooden spoon.                 

  • Step 2

Place the butter and syrup in a saucepan over low heat and cook, stirring sometimes, for 3 mins. Set aside for 5 mins to cool.                       

  • Step 3

Combine 1 1/2 tbs of boiling water and the bicarb soda in a small bowl. Add the water to the oat mixture and the butter mixture. Stir until combined.

  • Step 4

Roll spoonful’s of mixture into balls and place on the lined trays, allowing space for spreading. Gently press each ball to flatten slightly. Bake for 15 mins. Set aside on the trays to cool. The biscuits will harden as they cool.
