Chocolate Mousse Cake

Ingredients         

500gms dark chocolate

2 Tablespoons golden syrup

120gms unsalted butter

4 eggs

1 Tablespoon Caster sugar

1 Tablespoon plain flour, sifted

 

Method

  1. Preheat oven to 220 degree.
  2. Grease and line the base of a 20cm round spring-form tin with baking paper.
  3. Melt the chocolate, golden syrup and butter in a bowl over a saucepan of gently simmering water. Set aside to cool slightly.
  4. Place eggs and sugar in the bowl with an electric beater. Beat on high for 10 minutes until very thick and pale.
  5. Gently fold in the flour then fold in the chocolate mixture until combined.
  6. Pour into cake tin and bake on middle shelf for 12 minutes.
  7. Remove from oven and run a knife around the edge of the cake.
  8. Remove collar from the tin and transfer cake to the fridge for an hour to cool. (This sets the middle of the cake).
  9. Slice cake and serve with ice cream and/or whipped cream.
