Crack eggs into bowl, then add the coconut milk, water, vanilla, stevia, flour & bi-carb, season with a pinch of salt. Whisk to a smooth batter, then leave to rest for a minute.
Meanwhile juice the lemon
Heat the coconut oil in a large frying pan over medium heat. Pour in a tbsp of batter, leave to settle for a moment, then add more tbsp’s allowing a little space for each one. Fry for approx. 2 mins or until brown on bottom and set on the sides. Then flip and cook for a further 2 mins.
Transfer to serving plate and cook the remaining pancakes the same way.
Then serve each with a drizzle of lemon.
