Flipping Good Pancakes

Coconut Flour Pancakes with Lemon

 

Ingredients

 

2 large eggs​

100ml coconut milk​

125ml cold water​

1 tsp vanilla extract​

50g coconut flour​

1 tsp bicarb soda​

1 tbsp stevia​

1 tbsp coconut oil​

Salt​

Lemon (to drizzle)​

 

Method

  • Crack eggs into bowl, then add the coconut milk, water, vanilla, stevia, flour & bi-carb, season with a pinch of salt. Whisk to a smooth batter, then leave to rest for a minute.​
  • Meanwhile juice the lemon​
  • Heat the coconut oil in a large frying pan over medium heat. Pour in a tbsp of batter, leave to settle for a moment, then add more tbsp’s allowing a little space for each one. Fry for approx. 2 mins or until brown on bottom and set on the sides. Then flip and cook for a further 2 mins.​
  • Transfer to serving plate and cook the remaining pancakes the same way.
  • Then serve each with a drizzle of lemon.
