Year 9 & 10 students mark the end of the Chinese New Year celebrations
Year 10, The Catering Challenge, have been investigating food safety in particular cross contamination.
To reinforce food safety they made the following production. We would like to share it with you.
Lemon Bites with Salad
Ingredients
1 slices white bread, crusts removed
1/3 cup milk
200g minced chicken
1 tb grated parmesan
1 clove garlic
1 tb parsley-chopped
Rind of small lemon
Salt and pepper
1 tb. Oil for frying
Method
1. Soak bread in milk for a few minutes and squeeze out moisture
2. Combine bread, mince chicken, garlic, salt and pepper, parsley and lemon rind.
3. Mix together with hands and roll into walnut size with wet hands
4. Heat oil and fry, turning once
5. Drain on absorbent paper and allow to cool.
Salad Dressing
2 cups of mixed lettuce leaves 2 tb. Olive oil
¼ cup pecan nuts- sliced in half 1 tb. Cider vinegar
1 firm pear- peeled and sliced salt and pepper to taste
2 spring onions- sliced
Shaved parmesan for garnish
1. Place salad leaves, pecans and spring onions on serving plate
2. Place olive oil and vinegar in lidded jar, season and shake.
3. Add sliced pears
4. Pour over dressing and toss
5. Place on chicken bites and garnish with shaved parmesan.

Falling on the fifteenth day of the first month of the Chinese Lunar Calendar, Lantern Festival is a day marking the end of the Chinese New Year celebrations. This year the year nine and year ten students of Chinese joined the fun and celebration of this special day on the 27th of February by having a sweet dumplings cooking workshop. The sweet dumplings, also known as the glutinous rice balls, symbolizes unity and reunion. Let’s take a look at their demonstration.
