Hi,

It’s Katie here from the Food Tech Department at Viewbank. I thought I would share with you a super easy recipe to make a yummy Muesli, that year 8 students normally get to make at school, when they are learning about the importance of eating a balanced breakfast. 

The recipe can be changed up to what you have on hand. I added some walnuts to mine to give it another layer of crunch.

The only rule is to not add the dried fruit to the cooking stage. 

Have fun with it make it your own.

Homemade Muesli

Ingredients:

1 cup rolled oats                                           2 Tbsp sunflower seeds                   

2 Tbs wheat germ                                         2 Tbsp pumpkin seeds                                                 

1 Tbsp quiona flakes                                    2Tbs sultanas

1 Tbsp shredded coconut                           A pinch of cinnamon, optional.

2  tsp lecithin                                               2 dried apricots chopped or 2 Tbsp dried cranberries

2 Tbsp maple syrup                                     2 dried apples chopped or dates

 

Method:

  1. Preheat oven to 180 degress
  2. Line baking tray with baking paper
  3. Combine all ingredients except the dried fruit in a bowl.
  4. Place combined ingredients on a baking tray and bake for 10 minutes.
  5. After 10 minutes remove tray from the oven and stir the muesli then bake for a further 10 minutes.
  6. Cool and place in an airtight container for upto a month.
