Muhalbiya al-ruz

Our recipe of the week was Muhalbiya al-ruz a milky rice pudding originating from the Middle East. 

 

Rice was soaked in water and then blended in the food processor to create our pudding slurry.  Students gently heated milk and then mixed in their rice. Keeping a close eye they stirred the pudding and noticed how the texture gradually changed. Next, they added a splash of rose water and some ground cardamom for a fragrant finish. 

 

Our finished puddings were topped with stewed apples, sultanas and flowers from the garden. “Yummy” and “ delicious” as commented by many students in their kitchen journals.
