As the seasons have changed so has the food products students have been making in Café Culture. Students investigated and selected new and international flavours to create a Chicken Satay pot pie. This week students chose to create their own Pizza of the day for a Café. After working together to produce a traditional dough used for the base, students had the opportunity to select and design their own pizza. Students were introduced to traditional and new ingredients and made decisions on how their chosen ingredients would combine to create an appealing flavour and appearance.
Students have also been practicing their Espresso skills from the certificate they completed in May. Thank you to the West Wimmera Shire for funding this incredible opportunity for students at Edenhope College.
REPORTS FROM ESPRESSO COURSE
"Barista course
Last week the 9/10 Café Culture class had the opportunity to do a food handlers and Barista course. The course consisted of two days one of theory and paperwork and the other of hands on espresso making. The course trainer taught us how to make an espresso, macchiato, latte, cappuccino, hot chocolate, mochaccino and mocha latte. This course was fun and interesting as well as educational and taught us many skills. To make the coffees we cleaned the group heads and then filled them up with coffee grounds, we then tampered the grounds down gently, so it was below the faint line that goes around the group head then with two cups underneath to catch the coffee we put the group head In the machine. we first started with making a macchiato which is an espresso with milk gently poured into it (without a splash) so that the layers of milk and coffee stay separate or so it “stains the coffee.” Then with those macchiatos we turned one into a latte by taking our frothed milk, which you make by filling the jug with milk up to the “v” then frothing it until it changes pitch (making sure to clean it after each use.), you pour it into the macchiato while holding back the foam (this can be done with a spoon held on the spout.) until about ¾ of the way and then let the foam go so it creates a small layer on top. To make a cappuccino you take your macchiato and your frothed milk and pour the layer of foam on first then hold back the foam fill the rest with milk, when that’s done you lightly dust some drinking cocoa. Later in the day we made hot chocolates, mochaccinos and mocha lattes. The mochaccinos and mocha lattes are made the same way as a normal cappuccino and latte but you add about a tablespoon of drinking cocoa to the milk before you froth it. With the hot chocolates we made them by drizzling some chocolate syrup around the inside of the cup and adding the same milk with cocoa in it and fill it to the top making sure to get a combination of normal milk and fluffy milk, then dusted coco on top. My favorite part of this course was making the cappuccinos. I think this course was really helpful for those who wish to go into the food industry after school, this was an amazing opportunity to be able to have and if you have the chance to do this course, I highly recommend you take it."

"Barista course report:
Thanks to Michele, I learnt brand new tricks and hacks to easily and efficiently make coffees. I found it interesting to discover all the parts of the coffee machine and use common sense to figure out how to use it. When it came to making the foam art, I found that I lacked in that area but thanks to Mich, I finally got to understand the process and make something out of it. I really enjoyed making all the different types of coffees including expresso, macchiato, mocha, latte, hot chocolate and cappuccino. Which where all good. Overall, I would say that this course helped me a lot and making coffees is so much easier now that I understand it all."

"Espresso Course
On Wednesday and Thursday last week we had Michele come to school and she showed us how to use the coffee machine. We did an Espresso course, I thought that the cause was really handy, and I really enjoyed the course. I didn’t even know how to make a coffee and I didn’t know how to use the coffee machine I worked out how to use the coffee machine and now I know how to make coffee and use the coffee machine. When it was the choccy and chats yesterday I got to make the hot chocolates and test my skills. The hot chocolates were amazing! And everyone liked the hot chocolates, and everyone also liked the coffees. It was a great experience."

"Coffee report
On the 17th and 18th of May, Mich came to our school to teach us everything we needed to know about coffee. On the first day we had a booklet to fill out and we learnt about food poisoning and how to be safe in the kitchen. On the second day we had a go of the coffee machine and learnt how to make lattes, macchiatos, hot chocolates, mochas and cappuccinos. I really enjoyed learning about all the different types of coffees and how to make them and I think that Mich was an amazing teacher."

Students in Foundation and One have been learning how to make their own pizza, scone and sushi sandwiches. Students were introduced to different equipment in the kitchen and how this can be used to prepare ingredients. Using a muffin as a pizza base, students created their own Pizza face using a selection of healthy ingredients. Some faces even had glasses and were carefully prepared into delicious pizza faces. After watching the scone dough being prepared in the food processor, students had the opportunity to knead the dough and add some dried fruit or chocolate melts to produce their own scone. It was wonderful to see students’ creativity in designing their own scone. This week students have been looking at different ways to prepare a sandwich and produced sushi sandwiches. This time students used a rolling pin to flatten their bread so they could spread their ingredients. They then used their own hands to roll up their sushi sandwich and cut their sushi into four rolls. Students thoroughly enjoyed creating their own sushi sandwich and enjoyed identifying the sensory properties of the food they made.
The Year 2/3/4 students continue to shine in Technology – Foods. Students developed their skills in kneading and rolling out their pizza bases and then choosing their own topping. After returning from camp students made their own surfboard biscuits. Working collaboratively students grated carrot, mashed bananas, measured spices and syrups to blend with oats processed in the food processor and pepitas to create a delicious mixture. All students enjoyed the combination of flavours and the different textures of the ingredients used.
Students have been introduced to the sewing machine to create their own Chicken. Students have been learning how to pin and cut out a simple pattern and then pin fabric together ready to sew. They added beaks and combs and some now have eyes. It has been pleasing to see students engage with learning new skills and equipment which can be challenging and very rewarding!
Students have been very focused on sewing their Boxer Shorts together. After learning how to sew and neaten seams, students have developed their knowledge and understanding of the different processes involved in the production of their Boxer Shorts. Students will look forward to creating their swing tag to complement their Boxer Shorts and of course wearing their Boxer Shorts!
