Classic flourless orange cake
Ingredients
Cake
15g butter
2 oranges
4 eggs
1 cup CSR raw caster sugar
300g almond meal
1 teaspoon baking powder
slivered toasted almonds, to serve
Orange syrup
zest and juice of one orange
⅔ cup CSR caster sugar
Method
- For the cake, preheat oven to 160ºC/140ºC FF, grease a 22cm round pan. Line the base and sides with baking paper.
- Place 2 oranges in a saucepan and cover with cold water, bring to the boil and cook for 15mins. Drain and repeat the first step. Drain and rinse oranges under cold water. Coarsely chop the whole orange and discard any seeds. Place the chopped oranges into a food processor and combine until smooth, including the orange peel.
- In a separate bowl, beat eggs and CSR raw caster sugar until thick and pale. Fold in the orange mixture, almond meal, and baking powder until evenly combined.
- Bake for 1 hour or until skewer comes out clean.
- For the orange syrup, place the zest, juice, and CSR caster sugar in a saucepan. Simmer over low heat and cook for 2-3mins or until sugar dissolves and syrup has thickened.
- Turn the partially cooled cake out onto a serving plate and pierce cake all over with a skewer.
- Spoon the syrup over the cake so that the syrup soaks into the holes. Scatter toasted almonds onto to serve.

Super Quick Veggie Noodle Stir Fry
Ingredients
1 tbs olive oil
1 Woolworths Simply Cook Layered Stir Fry Kit with Honey Soy Sauce
450g packet Fantastic fresh hokkien noodles
4 free range eggs
150g roasted cashews
Method
- Heat 2 tsp oil in a large frying pan over a high heat. Add stir-fry vegetable mix, leaving sauce to the side, and cook for 3 minutes.
- Meanwhile, soak noodles in a medium sized bowl for 3 minutes in boiling water, then break apart gently with a fork and drain.
- Add noodles and honey soy sauce to frying pan with the vegetables and cook for a further 2 minutes, stirring frequently.
- In a separate non-stick frying pan, heat remaining oil over medium heat and fry eggs, sunny-side up, or to your liking. Stir cashews through stir fry, divide among four bowls and top each with an egg to serve.
*Many years ago, I ran healthy and quick Asian vegetarian cooking classes in conjunction with my health program. I believe the less time you take in cooking your food, the healthier it is.
I recommend this recipe for beginners learning to cook. It’s simple and quick and has a short list of ingredients. Happy cooking!!
