As we approach the end of the year, we are excited to be planning some great camping adventures around this amazing island, full of color and unique, magical corners!
I would like to thank all parents for the amazing support we’ve received with our lunch program. We are always open to feedback and happy to introduce your favorite dish for next year.
Our menu is seasonal and includes a wide variety of vegetables, grown through hard work by Luciano and Stan, with a huge helping hand from all the kids.
It’s amazing to see the amount of flavors these organic ingredients bring to our dishes.
I’d also like to share with you our popular pasta al pesto recipe. It’s become a favorite, and it’s a super vigorous dish, made with fresh, raw ingredients.
Ingredients:
Nut free pesto
Serve 4
75 gr pepitas
75 gr sunflower kernels
2/3 garlic cloves
300gr spinach
1 bunch basil
100 gr grated parmesan
150 ml extra virgin olive oil
Recipe:
- Wash and dry the spinach and the basil.
- Roast the pepitas and sunflower kernels in a fry pan.
- Using a food processor or stick blender, combine all the ingredients, adding salt to taste. Blend until you have a nice, smooth, and vibrant green sauce. If needed, add more olive oil to achieve the desired consistency.
You can add this pesto to cooked pasta or use as a dip for a snack time!
