On the Menu: Tomato, Herb and Cheese Pide

Students gathered at their benches and carefully measured out ingredients for the fresh dough. Combining yeast, sugar and lukewarm water they then very patiently waited for froth to appear. Next the wet mixture was combined with flour and salt and kneaded into a soft ball.

 

The dough was evenly divided into smaller balls and left to rise while the toppings were prepared. Excellent knife skills were utilised to finely dice tomato, onion, garlic and herbs. 

Once the dough had risen we carefully shaped each ball into stretched ovals. Toppings were sprinkled over and enclosed in our boat shaped creations. Into the hot ovens they went and before we knew it the golden, crispy parcels emerged to be enjoyed by all
