In the Garden with Mel

 

Grade Prep and 1 explored the garden and did some journaling of what they saw. They harvested and threw cornflower seeds into garden beds.  The Grade 456 classes weeded and mulched the garden and veggie beds and chose summer vegetable seeds from the Diggers Catalogue.

Our Pumpkin theme continued again this week with Grade 2 and 3 cooking Pumpkin, Greens and Ricotta Conchighlioni, with Home-made Ricotta, Rosemary Focaccia and Mizuna and greens salad.

From the garden we used Red Kauri, Butternut and Long Island Cheese Pumpkin, Tuscan Kale Silverbeet, Parsley, Garlic, Mizuna, snow pea sprouts, mint, Tomato Passata (from the freezer) and Limes (from Sue).

Emma’s group made the Pumpkin, Greens and Ricotta Conchighlioni, and showed great skills chopping and slicing pumpkin and onions and garlic and baking it, washing and chopping greens and grating the 3 cheeses.

Chris’ group made the Ricotta by heating the milk and adding the lime juice, everyone loved watching the curds separate from the whey as the ricotta formed. They also mixed, kneaded and shaped the dough to make the delicious Rosemary Focaccia.

Everyone had fun filling each of the large Conchiglioni pasta shells and adding them to the pumpkin sauce. Wren’s group harvested and chopped mizuna and greens and herbs for the salad and made a delicious dressing, with secret ingredients of tamari, and yuzu.  Our focus yesterday was cleaning, tidying and washing up as we cooked and Grade 2 and 3 did an amazing job and left the kitchen spotless at the end of class.  Well done everyone!

Everyone tried all the dishes and loved them.  The Rosemary Focaccia disappeared quickly! We got great feedback from staff and students about the delicious Pumpkin, Greens and Ricotta Conchighlioni and everyone wanted seconds.  The recipe is attached if you want to cook it at home, it’s a great dish if you have lots of greens and pumpkin.
