Kale chips

Our first winter vegetable that’s ready for harvest is kale - Cavalo Nero variety to be exact, also called Tuscan or black kale. Its Italian name hints at its origin and the dark green, almost black leaves. 

 

Students have learned that kale, as other brassicas containing the “k” sound, are rich in vitamin K. As you might know, vitamin K is a good buddy of vitamin D. So it makes sense that we eat brassicas in winter when there’s not a lot of sunshine. 

 

As vitamin K is fat soluble, cooking doesn’t destroy it. That’s why we made kale chips  - very popular with our students, healthier than packaged potato chips and very easy to make. A perfect winter snack and easy way to get fussy eaters to eat kale. 

 

Tea Time

In addition to kale chips, we made lemon verbena tea, sweetened with honey. We picked the leaves during warmer months and dried them so we can have the tea during colder months. Lemon verbena has many medicinal benefits and a mild, slightly lemony taste.
