Benefits of Cooking with Kids

  • This week we made some really yummy muffins to have for Afternoon Snack.
  • Some of the children turned their noses up at first when they were told they were Raspberry and Blueberry Muffins.
  • On “Giving it a go”, they said they really enjoyed the muffins, some said they had never tried muffins with fruit in them before.
  • Although not completely hidden, sometimes mixing fruit into mixes, such as the like of cakes and muffins, we can ensure children get to enjoy foods that aren’t necessarily bad for them and introduce new flavours to them.

Mixed berry muffins

These mixed berry muffins are filled with swirls of strawberries, blueberries, raspberries and blackberries all the way through them. 

Using frozen berries makes this recipe economical and easy!

 

Ingredients

  • 3 cups self-raising flour, sifted
  • 1 1/2 cups caster sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 150g butter, melted and cooled
  • 1 1/3 cups milk
  • 1 tsp grated lemon rind
  • 300g  Frozen Raspberry and Blueberries, defrosted and roughly chopped

Method

  1. Preheat oven to 200°C (180°C fan forced).
  2. Line a 12 cup muffin tray with patty pans.
  3. In a bowl, mix the flour and sugar.
  4. In a separate bowl, lightly beat the eggs, milk, butter and lemon rind.
  5. Stir in the flour and sugar.
  6. When the flour is just wet, fold in the berries.
  7. Fill muffins liners and bake for 25-30 minutes.

We also have been concentrating on scaffolding the children’s eye-hand co-ordination, fine motor skills and creativity with crafts.

Children have been actively planning art and craft with us.   Letting us know what things they would like to do while at After School Care.

What you’ll need:

  • Sturdy Paper Cup
  • Balloon
  • Sticky Tape
  • Texta (or we used self-adhesive eyes and mouths)
  • Craft Pom Poms

Method:

  1. Trim the base from the cup
  2. Cut out arms (from a piece or cardboard) and stick them on the side of the cup
  3. Tie a knot in the balloon (neck of the balloon)

4.Cut of the round end off the balloon

5.Stretch the balloon over the base of the cup and fasten with sticky tape.

6. Draw your eyes and mouth (attach eyes and mouth if they are stick on)

7. Place a few pom poms in and you’re ready to POP!

8. See if you can pop the pom poms up and catch them again.
