Katie from Food Tech here.
Last week, Year 8 students learnt about sustainability and the practical lesson was to make Banana Skin Muffins.
Give them a go they are pretty good.
Banana skin muffins
Individual
Ingredients:
½ cup SR Flour
½ cup wholemeal SR Flour
¼ cup vegetable oil
1 egg
1/3 cup (80mls) milk
¼ cup brown sugar
1/3 to ½ cup of processed banana and skin included
¼ tsp cinnamon
Method:
- Prepare muffin pans by lining with patty pans
- Preheat oven to 190ºC
- Sift flours together. Add sugar and cinnamon.
- Pulse banana and skin to a smooth texture.
- Beat in egg, milk and oil and mashed banana.
- Combine ingredients well.
- Place into prepared pans.
- Bake for 20-25 minutes or until pale golden and well-risen
