Katie from Food Tech here.

Last week, Year 8 students learnt about sustainability and the practical lesson was to make Banana Skin Muffins. 

Give them a go they are pretty good.

 

 

Banana skin muffins

Individual

 

Ingredients:

½  cup SR Flour

½ cup wholemeal SR Flour

¼ cup vegetable oil      

1 egg

1/3 cup (80mls) milk

¼  cup brown sugar

1/3  to ½ cup of processed banana and skin included 

¼ tsp cinnamon

 

 

Method:

  1. Prepare muffin pans by lining with patty pans
  2. Preheat oven to 190ºC
  3. Sift flours together.  Add sugar and cinnamon.
  4. Pulse banana and skin to a smooth texture.
  5. Beat in egg, milk and oil and mashed banana.
  6. Combine ingredients well.
  7. Place into prepared pans. 
  8. Bake for 20-25 minutes or until pale golden and well-risen
