Welcome back to School

When the entire school community returned to campus on 9 June 2020, the PFA organised a cheerful “Welcome Back to School”.  

 

Two bright red “Inflatable Men” were set up on the landing in front of the library facing the middle courtyard on the morning of Tuesday 9 June. 

They added a colourful touch, provided some fun and brought to the faces of all passers-by a happy, cheerful and for some an amused expression for a large part of the day.  They really brightened up the school grounds with their skinny, wobbly bodies, waving arms and warm smiles.  We are told the students loved the surprise and the feedback was amazing!

Winter Chicken Casserole (Courtesy: Sim Thein)

Feeds 5 hungry tummies

Ingredients:

  • 850g Chicken Thigh Fillets (skin on)
  • Sufficient Cornflour to coat chicken
  • Salt to season chicken
  • 2tbsp olive oil for pan frying
  • 2 cups chicken broth
  • 1 brown onion, chopped
  • 2 cloves garlic, minced
  • 1 cup white wine
  • ½ cup button mushrooms, sliced
  • 1 medium length carrot (15cm), sliced 0.5cm
  • 1 tsp dried rosemary, sliced finely
  • 1 tsp dried sage, sliced finely
  • 2 large dollops of plain greek yoghurt
  • 1 tbsp butter
  • 1.5 tbsp capers, finely minced
  • 1 tsp cornflour mixed with 1 tbsp water to make slurry
  • ½ lemon, juiced
  • 2 tbsp flat leaf parsley, sliced finely

Steps:

Marinate Chicken with salt then coat with cornflour.

 

Pan fry chicken till skin is golden and sealed; about 50% cooked.

 

Place the fried chicken in an oven proof dish and place the dish in a pre-heated oven at 200oC for 20 mins.  (reduce heat to 150oC after 20 mins).

 

Whilst the chicken is in the oven, put the 2cups chicken broth, chopped brown onion and minced garlic cloves to boil.  When broth has reduced to 1 cup, add 1 cup white wine and bring to boil. When this boiling liquid has been halved, add the sliced mushrooms, carrots, rosemary and sage.  Bring to a boil then reduce heat to a simmer until the mushroom and carrots soften (for about 10 mins).

 

Stir in the yoghurt, butter and capers and increase heat to reach a light boil. Stir in conflour and bring to a gentle boil.

 

Switch off heat and stir in some lemon juice.

Pour this mixture onto the chicken which had been put in the oven earlier. Increase oven heat back to 200oC for 10 mins.  Bring the casserole out of the oven and sprinkle the finely sliced parsley onto the Winter Chicken Casserole.
